Heap a teaspoon full of the chocolate and peanut mixture on a piece of parchment paper. Now all you have to do is add the roasted peanuts and mix till all peanuts are coated. How to temper chocolate in a microwave, the quick way For this chocolate peanut clusters recipe I’ll highlight the quick and easy way to temper chocolate in the microwave. Traditionally you would temper melted chocolate on a piece of marble, however, you can also use the microwave. But sometimes, I’m really not in the mood to temper chocolate and don’t mind the non glossy/grayish look. Tempering also gives chocolate a nice satin gloss. The reason why it’s a “better” to temper chocolate before processing it, is because tempering will help harden the chocolate, giving it a nice snap after cooling. Step 3 Drop spoonfuls of chocolate-peanut mixture onto waxed paper and let cool and harden, 30 to 45 minutes. Reduce heat to Low, stir, and cook for 1 hour, stirring every 15 minutes. If you’re less of a fan of salty though, you can omit the sea salt topping and use unsalted peanuts, but for us, the salty sweet thing is what makes this dessert special.
